Tater Tot Casserole

Casseroles are one of my favorite types of dinners! Combine everything in a casserole dish and bake and there you have it dinner is ready! Tater Tot Casserole is a super easy recipe to make, with only a few ingredients, its perfect for families on a busy night!

I know we have busy nights during the week and sometimes preparing dinner isn't something I want to spend a lot of time doing. Or creating a lot to clean up either. This is where simple meals come in SO handy! Another great one is my Broccoli Cheddar Casserole

This Tater Tot Casserole comes together easily and is super cost effective to make. Bonus, its large enough that you might have leftovers for another meal.

Ingredients for Tater Tot Casserole 

2 lbs ground beef, browned
1/2 small onion, diced
2 garlic cloves, minced
1 Tbsp Worcestershire Sauce
2 - 15 oz cans green beans, drained
2 - 10 oz can cream of mushroom soup
2 cups shredded cheddar cheese
3 cups frozen tater tots
salt and pepper to taste

Directions for Tater Tot Casserole

1. Lightly grease a 9x13 baking dish with cooking spray and set aside. 

2. Brown the ground beef and drain off the excess grease. 

3. Add the diced onion and saute until translucent. 

4. Add the minced garlic and cook for about 2 additional minutes. 

5. Add in the Worcestershire sauce, salt, and pepper and mix in well. 

6. Spread out prepared ground beef in the baking dish. 

7. Next add the layers, cream of mushroom soup, then green beans, then the shredded cheese. 

8. Lastly, top off the casserole with the tater tots layed out on top. 

9. Bake for 35 minutes at 375 degrees F. 

10. Ready to serve.

Beef and Noodle Casserole

This beef and noodle casserole is an easy comfort meal that is also perfect for feeding a crowd. This beef and noodle casserole is a delicious blend of ground beef in a flavorful creamy sauce, tossed with egg noodles and topped with a blend of Italian cheeses! For sure a meal the whole family will love.


I love a good casserole and I love having casseroles as part of our meal plan. It's a simple recipe that is great to fit in our busy schedule, but yet still having a nice meal. Perfect for a busy weekend or school night.


The egg noodles can cook in one pot at the same time as browning the ground beef. Set them aside after they are done and begin to make the sauce mixture. The sauce mixture quickly goes together. Then the cooked beef and noodles go back into the sauce and it is poured into a baking dish and topped with the cheese blend. Bake and serve.


I love that this recipe is one that you can do different variations to change it up a bit too. Add mushrooms or peppers to incorporate some vegeteables.

Freezer meals are also great and so helpful in the busy season of life. Make up this casserole in the 9x13, cover with foil and place in the freezer for a later time.



Beef and Noodle Casserole

Ingredients for Beef and Noodle Casserole

8 oz egg noodles
2 tsp olive oil 
1 lb. ground beef, I used 85% lean
salt and pepper to taste
1 small onion, diced 
2 cloves garlic, minced
3 Tbsp butter
2 1/2 cups beef broth
3/4 cup sour cream
2 cups Italian blend cheese 

Directions for Beef and Noodle Casserole 

1. In a large sauce pan, cook the egg noodles al dente, just a few minutes shorter than instructed on the package. Drain and set aside. 

2. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until its browned and cook through. Season with salt and pepper to taste. 

3. Once the ground beef is cooked, remove it from the skillet, leaving the grease in the skillet. With 85% lean, there is just the right amount of grease left. Set aside the cooked beef. 

4. Add the diced onion and minced garlic to the pan to saute in the grease for about 5 minutes, until soft and translucent. 

5. Then add the butter in and stir around in the onion/garlic mixture until melted. 

6. Add in the Clabber Girl Cornstarch and using a fork, stir it in continuously for about 1 minute.

7. Add in the beef broth and in until the mixture is well combined. 

8. Mix in the sour cream and 1 cup of the cheese and stir continuoulsy until melted and well combined. Let simmer for 3 or 4 minutes and sauce will thicken. 

9. Add the cooked ground beef back into the skillet and stir together with the sauce mixture. 

10. Then add the cooked egg noodles, and stir in carefully until they are well coated. 

11. Pour into a 9x13 baking dish and spread evenly in the dish. Sprinkle the remaining 1 cup of cheese over top of the casserole. 

12. Bake at 375 degrees F for 15 minutes until cheese is melted. Then it is ready to serve.

Cornbread Chicken Pot Pie

Packed full of hearty filling of vegetables and chicken and topped with the sweet cornbread topping. This Cornbread Chicken Pot Pie is made from scratch and large enough to feed a bigger family with some left overs. Perfect for those cooler months when you're craving comfort food!

Pot pies are a classic great comfort food to enjoy during the fall and winter months! The savory goodness of gravy, a mixture of vegetables, and chicken all baked together under fulfilling crust.



We are in the heart of winter here in Indiana with this unusual Polar Vortex going through. This week we have had cold cold temperatures reaching in the -40/-50s with the wind chill. School has been canceled, my husband's work has been closed. We haven't left the farm. What a great time to spend cooking and we have done a lot of it. 

This homemade Cornbread Chicken Pot pie doesn't disappoint. Quick. Simple. Tasty. A delicious all in one meal. 



Cornbread Chicken Pot Pie

Ingredients for Cornbread Chicken Pot Pie

Filling 

14 oz. frozen mixed vegetables 
1/4 cup butter
1 cup chicken broth
1/2 tsp salt
1/2 tsp black pepper
3 Tbsp all purpose flour
1 cup heavy cream
1/4 cup chopped onion 
2 cups cubed or shredded cooked chicken 

Cornbread Topping 

1 cup yellow cornmeal 
1 cup all purpose flour 
2 Tbsp sugar
1 tsp salt 
1 cup milk 
1/2 stick butter, melted and cooled
2 large egg

Directions for Cornbread Chicken Pot Pie

For the Filling 

1. Place the frozen vegetables in a large sauce pan and cover with water. Over medium high heat, bring to a boil. Cook vegetables until they are tender, about 5-10 minutes. Drain and set the vegetables aside. 

2. In a small saucepan, melt the butter. Add the chopped onions and saute for 2-3 minutes until just barely tender. Add chicken broth, salt, pepper, and flour. Stir until well combined. Then add the cream and stir continually while cooking until the mixture thickens, about 4-5 minutes.  

3. Pour sauce mixture over vegetables, add the cooked chicken and stir everything together until coated well with the sauce mixture. Spoon the vegetable mixture into a greased 9 x 13 baking dish and set aside.

For the Cornbread Topping 

1. In a large mixing bowl, add the cornmeal, flour, sugar, Clabber Girl Baking Powder, and salt and stir to combine together. Add the milk, melted butter, and eggs. Stir together until mixture is well blended and smooth.

2. Spoon the cornbread mixture on top of the vegetable mixture in the baking dish. Spread out the cornbread mixture to cover the filling. Bake at 400 degrees for 20 -24 minutes, or until the cornbread is golden on top.

Broccoli Cheddar Casserole

Are you looking for an easy casserole dish to take to your next pot luck dinner? This Broccoli Cheddar Casserole is super easy and flavorful! It is sure to be a favorite for broccoli lovers at your next get together.



With the holiday season upon us, it is time to start thinking about what you might plan to make for your holiday meals.

I know at my family holiday meals, there is a big array of casseroles. I am a big fan of all the different casseroles and have more of those than the main turkey or ham served at Thanksgiving and Christmas.

You can't go wrong with this Broccoli Cheddar Casserole!


 Broccoli Cheddar Casserole

Ingredients for Broccoli Cheddar Casserole

1 lb. frozen broccoli florets
8 oz. shredded sharp cheddar
4 cups cooked white rice
1 small yellow onion, diced 
1/2 tsp minced garlic
3 Tbsp butter 
3 Tbsp Clabber Girl Corn Starch 
2 cups milk 
1/2 tsp salt
1/4 tsp paprika
1/4 pepper

Directions for Broccoli Cheddar Casserole 

1. Chop the frozen broccoli into bite size pieces, it will thaw out some with handling during the casserole preparation. 

2. Add the broccoli pieces, the cooked white rice, and about 3/4 of the shredded sharp cheddar to a medium mixing bowl. Set the remaining cheese aside to use later. Stir it together until evenly blended together. Set aside. 
3.  In a small pan, to make the sauce, add the diced yellow onion, the minced garlic, and the butter. Cook on medium heat until the butter is melted and the onions become translucent.

4. Add the milk and corn starch and whisk together continuously until sauce mixture comes to a boil. Remove from heat. Sauce mixture will thicken.

5.  Add the salt, paprika, and pepper to the sauce mixture and stir together until well mixed in.

6.  Add the sauce mixture to the broccoli mixture and mix together until coated well with the sauce mixture.

7. Pour the casserole ingredients in to a well greased 9 x 13 pan. Then add the remaining cheese over top of the casserole.

8. Bake at 350 degrees F for 35 to 40 minutes.

Apple Fritter Breakfast Casserole

This apple fritter breakfast casserole combines all your favorite flavors of apple fritter donuts into a breakfast casserole. Simple to prepare, place in the oven, and enjoy apple fritter breakfast casserole for everyone to enjoy.

On our farmers market Saturdays. its a weekly tradition to head across the street and grab donuts from our local bakery. Sometimes our kiddos will join us at the market also, and they really enjoy the morning donuts and look forward to getting them.  My favorite is the apple fritter!

The sweet cinnamon breading with bits of juicy apples topped off with a creamy icing!

Delicious....



So simple! Prepare the ingredients and layer in the 9x13 and bake. Let cool then add the icing.


Apple Fritter Breakfast Casserole

Ingredients:
Apple Mixture
5 apples - peeled and chopped ( I like more tart apples, so I used Granny Smith)
6 Tbsp butter
1 cup brown sugar
2 tsp Clabber Girl corn starch
2 Tbsp warm water

Casserole Base: 
4 large Croissants (12 oz)
1/2 cup heavy cream
1/2 cup apple butter
3 eggs - beaten
1/2 tsp cinnamon

Glaze:
3/4 cup powdered sugar
4 Tbsp heavy cream
1 tsp vanilla extract 

Directions: 
For the apple mixture
In a medium size pan, melt the butter over medium heat. Add the brown sugar to the melted butter and stir until both are completely blended. Add the chopped apples pieces to the pan and stir until they are coated well with the sugar mixture. Cook for 5 to 10 minutes longer while continuing to stir. During that 5 to 10 minutes, in a small bow stir together the corn starch and warm water and add to the apple mixture and cook/stir for the remainder of the 10 minutes. Remove from heat and set aside while preparing the rest of the casserole. 

For the casserole
In a small bowl add the heavy cream, apple butter, eggs, and cinnamon and whisk together. Pull apart the croissants into chunky pieces and place at the bottom of a sprayed 9x13 casserole dish. Pour half of the apple butter/cream mixture over the croissant pieces and then top with half of the apple mixture. Layer in the remaining half of the ingredients. Using a spoon, gently stir around the ingredients so apple mixture and the apple butter/cream mixture are somewhat coating the croissant pieces. Bake at 375 degrees for 25-30 minutes. Remove from oven and let cool down to warm. Add glaze and serve. 

For the glaze
Combine the powdered sugar, heavy cream, and vanilla extract together in small bowl and stir together with a fork until smooth. Drizzle over the breakfast casserole. 

Optional: Sometimes when making this casserole I will add 1/2 cup chopped walnuts or pecans when cooking the apples.

Loaded Mashed Potatoes

Are you looking for a Loaded Mashed Potatoes recipe?! Then I have the recipe for you! My family loves these potatoes.



Potatoes are one our favorite vegetables to grow in the garden. The grew very well this year and produced several bushels of potatoes. We are in the process of getting all the potatoes dug, cleaned, and graded by size, then sell them in bulk for our customers for the fall and winter months. The kids enjoy helping us dig them too. I especially love that they are seeing the whole process of farm to fork with helping us plant, dig, and prepare them for cooking.


We love potatoes!
Potatoes are a staple in our home. We eat them often various ways. This recipe is one of our favorites to have and everyone likes it! Usually we get leftovers from it too, which is also a added plus. 



Ingredients:
- 5 lbs potatoes
- 1 stick of butter
1 cup sour cream
3 cups shredded cheddar cheese
- 1/4 cup milk
- 1 lb bacon 
- green onions, green tops cut into pieces
- pepper

Directions: 
- Peel and cut up the potatoes and place in pot of water, boil until fork tender. 
- Cook bacon and crumble into pieces. 
- Preheat oven to 350 degrees
- Once potatoes are ready, drain and transfer to a large mixing bowl. Cut butter into several pieces and add those, the sour cream, and milk to the potatoes. Mash all together with a potato masher. 
- Add pepper, half of the bacon, and 2 cups of shredded cheddar cheese to the potato mixture. Mash everything together with the potato masher. I don't mind if my potatoes are slightly chunky, but mostly mashed. 
-Transfer potato mixture to a 9 x 13 baking dish. 
- Sprinkle the remaining cup of shredded cheddar cheese onto the top of the potatoes. 
-Bake in the oven until top cheese is melted and potatoes bake through - about 20 minutes. 
- Remove from oven and sprinkle the remaining bacon and the green onion pieces on top of the mashed potatoes. 
-Serve.  

This loaded mashed potato side dish would make a delicious addition to any of your meals. It is also great for those family get togethers and potluck dinners. A great way to enjoy potatoes from your own garden as well.

Cheesy Ham Hashbrown Casserole



I love casseroles and this is one of my family's all time favorite meals. It's easy and you can just throw the ingredients together and walk away from while it's in the oven. We eat this often and it is a good go-to dish to take to family gatherings.

Casserole Ingredients Needed:

24 oz. hashbrowns - shredded or homestyle (we like shredded best)
16 oz diced ham
2 cups shredded cheddar cheese
1 can cream of chicken soup
16 oz sour cream
1/4 cup onion
1 stick of butter melted
pepper to taste

Combine the above casserole ingredients together in a large bowl and mix well.


Transfer to a 9x13 casserole dish 



Topping Ingredients

2 cups cornflakes
1/2 stick of butter melted

I like mine extra crunchy so sometimes I tend to add more cornflakes

Mix the cornflakes and melted butter together, then add to the top of the casserole. 


Bake at 350 degrees for 60 minutes.

So simple and easy. The best part is that there isn't a huge mess in the kitchen to get a tasty dinner!
