Key lime pie is perfectly tart, creamy, and smooth and a dessert favorite! The texture is so lovely and rich. When serving pair the pie with a nice big dollop of whipped cream to complete the dessert!

A key lime pie starts with the graham cracker crust. You can always buy a premade crust, but crusts made from scratch are so much better! So I've included crust directions in the recipe. While the crust is baking, you can make the pie filling. Fill the baked pie crust, bake a little more, and then let the pie cool. Refrigerate overnight and then your pie is ready to enjoy!!

A key lime pie is called that for a reason. It calls for key limes, but sometimes they can be harder to find. But key lime juice can be found in the juice isle at the grocery store and always works great for that key lime refreshing flavor!

Key Lime Pie

Ingredients for Key Lime Pie

PRINTABLE RECIPE

For the crust: 
1 1/2 cups graham cracker crumbs
6 Tbsp butter, melted
5 Tbsp sugar

For the filling: 
1 cup sugar
4 Tbsp flour
2 Tbsp Clabber Girl Cornstarch
1/4 tsp salt
2 cups water
4 large egg yolks,
4 Tbsp key lime juice
2 tsp butter
1 tsp grated lime zest
whipped cream, additional lime zest, and thinly sliced key limes, optional for garnish


Directions for Key Lime Pie

Crust: 

1. Combine graham cracker crumbs, sugar, and butter in a small bowl. Mix until blended well. 
2. Press crumbs into the bottom and sides of a 9 inch pie pan coated with cooking spray.
3. Bake for 10 minutes at 350 degrees F, then cool on a wire rack.

Pie Filling: 

1. In a medium saucepan, combine the sugar, flour, Clabber Girl Cornstarch, and salt together. Gradually stir in the water.
2. Cook and stir over medium heat until the mixture thickens.
3. Remove from heat and add egg yolks and stir in immediately.
4. Return to heat and stir constantly while bringing mixture to a gentle boil and cook for 2 minutes longer.
5. Remove from heat and stir in lime juice, butter, and lime zest.
6. Pour into cooled crust. 
7. Bake for 10 minutes at 350 degrees 
8. Remove from oven and let cool 
9. Refrigerate for at least 2 hours for a cool dessert or freeze overnight for a semi-frozen dessert
10. Top with whipped cream, lime zest, and lime slices when serving. Refrigerate leftovers

Top Canning and Preserving Recipes

Growing a garden has always been a big part of our summer. We plant a large garden each year. The time and work it takes is so rewarding when collecting all the bountiful produce. I love to grow different fruits and vegetables to enjoy fresh from the garden. There's nothing like biting into a fresh tomato right off the vine from the garden! Or fresh green beans straight from the garden for dinner! Do you have a favorite from the garden?


When planning and planting our garden each year we plant extra seeds and plants so that we are able to canning and freezing any excess if the garden does well.  Preserving the garden is a great way to enjoy homegrown produce all year.


Gardening is becoming more and more popular. Not only for the joy and love for gardening, but ultimately for the ability to feed their families better tasting and healthier food as well as saving money.

Instant Pot Italian Beef


Italian Beef is a sandwich favorite of the Midwest! This Instant Pot Italian Beef is super easy to make! There is absolutely no prep work that needs to be done beforehand, which I love! Sandwiches are great for summer get-togethers, picnics, as well as a dinner idea for the family.

My Instant Pot has become a favorite kitchen gadget of mine! It helps make meal time so much easier, especially during the busy times for my family. Summer is always busy with the kids in sports, prepping for our county fair, keeping up the garden, as well as all our usual activities.

This Instant Pot Italian Beef is considered a "dump and go" recipe. You literally just dump all the ingredients into your Instant Pot and push start and your set for the main dish for dinner.

Instant Pot Italian Beef

PRINTABLE RECIPE

Ingredients for Instant Pot Italian Beef

2 Tbsp olive oil
2.5 to 3.5 lb. beef roast, preferably chuck, rump, etc)
12 oz. jar sliced pepperoncini
2 Tbsp minced garlic
2 cups beef broth. 


Directions for Instant Pot Italian Beef

1. Place all the ingredients into the Instant Pot, including half off the pepperoncini juice. 
2. Lock the lid in place and make sure the pressure valve is turned to sealing. 
3. Press the 'Manual" button and adjust the time to 80 minutes. 
4. The Instant Pot will beep when it's finished cooking, release the steam valve to let the pressure out. Then unlock the lid and remove. 
5. Shred the meat and stir into the juices. 
6. Enjoy Italian Beef sandwiches on buns or pretzel rolls with sharp cheddar, provolone, or mozzarella cheese. Reserve some Italian Beef juices from the pot if you like to dip your sandwich.

Summer brings may opportunities for get-togethers, cookouts, picnics, backyard BBQs, and pot-lucks with celebrations of holidays, birthday parties, family reunions, and the list goes on. My family has a 4th of July/family reunion every year. Each family brings a side dish or dessert to share along with lots of burgers and hot dogs from the grill. There are games for the kids, corn hole, swimming, beer, lots of visiting with family, and lots of food. At the end of the night we light our own fireworks. A fun all-American celebration.

Red, White, and Blue Cupcakes

PRINTABLE RECIPE HERE

Ingredients for Red, White, and Blue Cupcakes

2 1/2 cups flour
2 cups sugar
3 tsp Clabber Girl baking powder
1 tsp salt
1 cup milk
1/2 cup vegetable oil 
1/2 Tbsp vanilla extract
2 large egg whites
1/4 cup water
white frosting (any kind you like, I used Whipped Vanilla)
red and blue food coloring gel
sprinkles and flag cupcake liners ( I used this fun kit)

Directions for Red, White, and Blue Cupcakes

1. Preheat oven to 350 degrees F and prepare cupcake pan with liners.  
2. Add the flour, sugar, Clabber Girl baking powder, and salt to a large mixing bowl or your stand mixer and mix together. Set aside. 
3. In another mixing bowl, add the milk, vegetable oil, vanilla extract, and egg whites and mix together. 
4. Add the wet ingredients to the dry ingredients in the large mixing bowl and combine together until well mixed. Add the water to the batter and mix together on low speed until it is all well combined. 
5. Divide the batter into equal amounts into 3 separate bowls. 
6. Use the red and blue food coloring gel and color 2 of the bowls of batter, to have a red, white, and a blue batter. I used about 2 butter knife tips of food coloring, you can add more to or less for desired color. 
7. Spoon a little of each batter into your cupcake liners, filling about 1/2 full. 
8. Bake for 17 to 20 minutes, or until toothpick comes out clean. 
9. Let the cupcakes cool for a few minutes, then remove them to a cooling rack to finish cooling. 
10. For the frosting, simply use a premade white frosting. Add the frosting to a piping bag. 
11. When the cupcakes are completely cool, pipe the frosting on top of the cupcakes. I used the round piping tip Wilton #12
12. Add sprinkles and other holiday decorations to cupcakes.
